There is no one recipe for Masala Chai other than the fundamental rule that you always use real spices. For as many regions there are in India, there are just as many ways to make this spiced beverage.  However, there are some staple players in making this brew, namely a combination of different spices, black tea, milk (in India they use buffalo milk) and sugar to unlock the robust flavours of the spices.

The spices, and indeed the preparation method, vary from region to region and household to household. It typically involves warming spices like cinnamon, cardamom, and ginger.  Other variations can include ingredients like black pepper, saffron, rose, fennel, peppercorn, clove, and star anise.
